If you haven’t been to Yoichi in Fort Worth yet, what are you even doing?? First of all PLAN AHEAD. Either get there early or lock in a reservation, because this spot is not a secret for long. The sake list?? INSANE. Like, you’re 100% ordering something you can’t pronounce and somehow it becomes your new favorite. And the sushi… I’m not exaggerating when I say it’s perfection. No soy sauce, no extras, just pure, melt-in-your-mouth, “wait why is this so good” energy. But honestly, the vibe is what got me. The staff are actual legends. So cool, so welcoming, you’ll wish you could just sit there all night and have a drink with them. I’m telling you right now you’ll already be planning your next reservation before you even pay the bill.

I visited twice, once in February and again a few days ago, and had mixed feelings. My first visit was a five-star experience, while the second felt closer to three stars. It seems the overall experience may vary depending on the chef. The restaurant offers sushi bar seating only, which naturally lends itself to interactive communication between guests and the chef. I experienced this during my first visit with Chef Ian (pictured), which made the meal especially engaging. I understand the restaurant was busier during my second visit, but the experience felt more like being served an $85 bento box, with no explanation about the order of the sushi or the reasoning behind each course. Aside from being asked if I needed wasabi or ginger and a brief expression of thanks, there was no interaction. The cuisine leans more toward an izakaya-style flavor profile rather than strictly traditional, which adds a fun and unique element to the experience. The servers are courteous; however, given that this is an omakase setting, it would enhance the experience if they offered thoughtful drink pairings along with some explanation. We had the omakase here and it was absolutely fantastic. I also had a brief conversation with the chef, and it was clear how much attention to detail he puts into every element. The sushi rice was perfect — the texture was spot on, and the level of acidity was balanced just right, which made every piece shine. The uni was Santa Barbara uni, and it had that beautiful ocean aroma with a clean, rich finish. Overall, the quality of the ingredients, the precision in preparation, and the chef’s dedication made this a truly memorable omakase experience. I’d definitely love to come back.

I am a dedicated and frequent customer of Hatsuyuki Handroll Bar, so when I knew that there is another handroll and sushi place where I can order my specific favorites instead of following a fixed Omakase menu, I was willing to give it a try. You can expect to be seated immediately upon arrival, which is a huge plus point. The price is reasonable compared to the quality. Yoichi provides both Omakase and A la carte dining experience and I think the quality of the cuts was excellent. The spotlight of my dinner was the kanpachi nigiri. The cut was from the lower belly of the fish, with deep flavor and crunchy texture. I ended up order the kanpachi nigiri twice. The head chef told me that that specific cut has limited quantity so they can only serve 5-6 portions of that every day, the rest of the kanpachi nigiri will be cut from other parts of the fish, which would still be good, but definitely not as interesting in term of flavor and texture. Another difference that I noticed was that for cooked protein like crab and anago nigiri, the rice seemed to be seasoned more boldly compared to the rice for more delicate cuts of fish like kinmedai or kamasu. Another quality sushi spot in Fort Worth! This place is great, from every member of the staff, to every piece of fish served. Everyone is so friendly. I recommend the Salmon Crudo. Many around us got the omakase, but we just got assorted nigiris - all were fresh and made with love. Keep up the amazing work!
